Durham Tech doesn't have any policies that I know of that would prevent you from setting up a wiki on one of the above sites and then getting your students to set up account on it so they can use it. Wikis allow a group of people to collaboratively create (and edit) web pages.
There are several web sites that offer free wikis that are pretty easy to use. I've played around some with the first 2 listed below; have not yet tried out the 3rd:
